Recipe for success

Zafferano, the Michelin-starred Italian restaurant, opened in Belgravia in 1995 and has been serving up some of the best Italian cuisine in London ever since. Now it is offering to share some of its tips and tricks in a series of cookery classes.

The classes take place in the restaurant’s delicatessen next door. They are led by Sardinian-born Paolo Saba, executive chef of the London Fine Dining Group that owns Zafferano. Numbers are limited to just six people per class, to ensure all guests have one-on-one time with Paolo. Each class has a different theme and costs £125 per person.

On August 22, Paolo will teach guests how to cook traditional Italian meat dishes, including an Italian roast, vitello tonnato and stuffed capon. On September 20 he will focus on antipasti dishes, show you how to make the perfect octopus salad and dress courgette and aubergine. On October 20, it’s all things fish. Cook a lobster fricassee with artichokes and herbs, stuffed calamari and monkfish with a peppercorn crust.
